Domaine Rossignol-Cornu et Fils Pernand-Vergelesses fils produces highly regarded Pernand-Vergelesses wines from their historical family plots in the Côte de Beaune region of Burgundy.
The grapes are completely destemmed. Once they are in the tank, we conduct a cold maceration for 5 to 6 days. This process allows us to perform both punching down and pumping over to effectively extract the characteristics of the terroir. Alcoholic fermentation occurs in concrete tanks, while malolactic fermentation takes place in barrels.
