12 Year Old Cognac from Montifaud

Chateau Montifaud Special Reserve from the Michel Vallet family.

Tasting notes
Notes of linden flowers, dry flowers and vanilla. On the palate, hints of apricot and prune. Not aggressive on
the palate but a bit woodier than the VSOP. A nice "rancio" and wood enlighten this smooth
but powerful Cognac.

Leading Cognac of the range, the RESERVE SPECIALE MICHEL VALLET, blended Cognac for the year 2000,
is unrivalled on the market. Both as digestive or with a chilled pear dessert, it will amaze you with its
generosity, value and character: a fair reflection of its creator.

Wine-making: fermentation temperatures control (maximum 27° to keep all aromas), and then wine
storage on the lees for optimum conservation without sulfites addition.
Artisanal Distillation: the white wine is distilled with lees very slowly; it also develops a roundness
and concentrates on the floral character of the Cognac.
Ageing: this special blend of several cognacs aged 1year maximum in new French oak casks, then in
old casks for much more than the 6 years required by the regulation.
Reduction: slow (5%vol reduction every 3-4 months for this Reserve).
Blending: Special and unique quality, blended by Michel Vallet, 5th generation.
Bottling: this decanter is bottled and labelled all by hand.

The Château Montifaud has belonged to the Vallet family for six generations now.The vineyard was created in 1837 by Augustin and has seen the succession of Pierre, Maurice, Louis and Michel. Laurent came to join his father and grandfather in October 2000.According to the family tradition, when a son joins his father, a part of the cognac distilled in that year is set preciously aside and will only be sold by the future generations.

Thus it is that in the darkness of our Paradise cellar lie bottles of Cognac skilfully made by Pierre and Maurice Vallet.

Our family cellars have also seen the ageing of cognacs that date from 1920 to the persent day, part of which, in vintage years, has been sealed by the B.N.I.C (the National Interprofessional Office of Cognac).

Our vineyard stretches over 90 hectares in the two premier regions of cognac area :

In the Grande and Petite Champagne whole soil contains a very great amount of active limestone.

This chalky content plays a dominating role in quality of our Eaux de Vie (spirits, cognacs).

Thanks to this exceptional land, Château Montifaud possesses an extremely high potential for quality.

During each of the different phases of making our cognacs (producing, distilling, ageing), we apply our traditional craftsmanship and skill handed down from father to son.

These allow us to enhance the natural qualities of our Eaux de Vie : the floral touches, the delicacy and elegance to the nose, the roundness, the suppleness and the long-lasting taste in the mouth
