GRAPE: 100% white SauvignonOrigin: Situated South of Orleans on the slopes of the Loire
Vinification :The wine harvests are at the end of September at the
highest point of maturing. We use a short skin contact
for few hours, and then a fermentation at low controlled
temperature to preserve aromas
Soil: Marl and compact calcareous
Colour: Yellow with green tints
Nose: Expressive with floral notes, lightly vegetal, developing
into mineral aromas
Palate: A dry, fruity white wine with mineral and fruity aromas,
Pouilly Fume is full-bodied and round with a fresh attack
Recommendations: It is the perfect accompaniment to fish and shellfish
in sauce. It reveals also itself with white meats, goat
cheeses or asparagus
Serving condition in C°: To be served chilled 10-12°C
Alcohol content : 12.5
Cellar potential : 2-3 years

Comments : The term "fume" has two explanations:
The first is linked to the varietal "white Sauvignon": when
mature the berries of white Sauvignon are covered in
a smoke-coloured, "fumé"meaning smoky, grey bloom,
which explains why Pouilly wine growers used that name
for this Appellationg
