Harvest :
Entirely picked by hand and requiring 4 to 6 pickings of each plot. Generally carried out from the
20th September to the first days of November.
Vinification :
The wines of Château Bastor-Lamontagne ferment in barrel for 3 to 4 weeks at a controlled
temperature of around 22/24°C.
The wines reserved for Remparts de Bastor ferment in temperature-controlled stainless steel vats
(22/24°C).
Ageing :
From 13 to18 months in barrels, depending on the vintage.
The second wine, Les Remparts de Bastor, is aged in vat and sometimes partially in barrels,
